wild garlic capers

this is just such a DELICACY that i love more than anything! there are different ways to prepare them and i will show you one really simple one.

 

use the still closed flower buds and, depending on the size of your you jar, 1/4 or 1/2 litre of white wine vinegar.

 

put the wild garlic flower buds in a jar that will be full with them.

 

heat up the vinegar with some peppercorns (and a few spoons of sugar if you like)

 

pour the hot vinegar into the jar with the wild garlic flower buds until the jar is fully filled - close while still hot -- finished!

 

the taste of the flower buds gets 'softer' the longer you leave it in the jar. after about 2 weeks they should be perfect to eat.
