strawberry jam

i love strawberries jam either just straight from the jar or as an addition to breakfast or dessert. you can use any kinds of berries for this recipe - it is basic and simple and high in fruit!

 

ingredients for one big jar:

2 cups frozen strawberries

1 very full teaspoon agar agar

1/2 cup rice syrup

pinch salt

pinch ground vanilla powder

 

method:

let the strawberries defrost for a couple of hours and then heat them up slowly in a pot, add salt and vanilla. because of the slow heating process the berries will lose water, which is great. in an seperate bowl mix the agar agar with 4 tbsp of water. after 10 minutes of boiling the strawberries, mix in the agar agar, bring to boil once more, add in the rice syrup, let it cool down until luke-warm and fill it into a jar. ready to enjoy for the sunday brunch!
