Pumpkin rice lunchbox

it's a lunchbox with only two main ingredietns, brown rice and pumpkin- boring you might think now...but wait until you have it.

brown rice seasoned with cocnut oil and ume-su (or cider vinegar)

pumpkin with almond butter, sprinkled with hemp seeds, sea-salt and lemon.

and that is a hell of a feast in a box.



1 1/2 cups cooked brown rice

2 cups cooked pumpkin in big pieces

2 tbsp almond butter

2 tbsp hemp seeds

1/2 lemon (the juice)

1 tsp coconut oil

1 tbsp ume-su vinegar / cloudy cider vinegar

salt to your taste
