sweet-potato brownie

ingredients:

 

2 medium sweet potatoes (organic)

3 flax seed eggs - recipe here

3-4 tbsp melted coconut oil

5-8 tbsp sweetener of your choice (coconut flour sugar, raw honey, agavesirup....about 1/2 cup)

*3/4 cup unsweetened chocolate chips or 100% zotter chocolate (optional)

3 tbsp coconut flour (or. ground nuts, hazel,almonds whatever you like)

5-6 tbsp organic cocoa powder (unsweetened)

2 tsp baking powder

3/4 tsp organic vanilla powder

1/2 tsp cinnamon

 

*if you don't have unsweetened chocolate chips i like to use roughly chopped nuts e.g.: brazil nuts/hazel etc. give it a nice crunchyness

 

- cut sweet potatoes in half and bake for 30-40 min at 180°C

- remove skin and mash them in your mixing bowl

- add flax seed eggs

- add all other wet ingredients

- add all dry ingredients

- pour into a baking pan

- bake at 180°C for 30-40min

- let it cool down before cutting

 

cashew-lemon frosting

 

ingredients:

 

1 cup cashewnuts (you can soak them over night - but you don't have to)

juice of 1 lemon

6-8 tbsp agave syrup 

1/2 tsp vanilla powder (organic)

1 tbsp water

 

blend everything in a blender until smooth (unless you love the little nut pieces as much as we do) put on top of the cool brownie and enjoy right away or let it rest in the fridge to let the frosting harden.

    Hey, wenn man "normale" Eier verwenden möchte, statt den Leinsameneiern, ist das Verhältnis für diese Rezept 1:1 (also 3 Eier für 3 Leinsameneier?)
