detox coconut-banana muffins

zutaten für 12 muffins:


4 sehr reife bananen
130 g kokosmehl
100g  agavensirup  (od. 40g kokosblütenzucker)
2 tl kokosöl
4 el apfelmus

2 el leinsamen gemahlen
1 tl apfelessig

2 tl backpulver / weinsteinbackpulver (od. ein päckchen)
1/2 tl vanillepulver gemahlen

1 tl zimt od. lebkuchen gewürzmischung

schale einer zitrone (bio! fein abgerieben)

prise salz

 

zuerst die reifen bis überreifen bananen in einer schüssel mit der hand oder dem kartoffestampfer zerdrücken bis ein bannanebrei entstanden ist. dann die restlichen zutaten hinzufügen und alles miteinander verrühren, in die förmchen füllen und bei 200°C 20min backen. dann das rohr abdrehen und 10-15min nachziehen lassen.

 

tip: für ein extra karibisches feeling - 1-2 schuss rum dazu mischen ;)

 

glasur:

mandelmus-schoko butter für 2 portion

1 el mandelmus - 1tl agavensirup - 1/2 tl kakaopulver ungesüßt, alles mischen und auf den muffin streichen oder den muffin in 2 hälften schneiden und bestreichen.

 

extra-extra: reis-sahne (unser liebling) od. soja-schalgsahne für die extra-super-cremige-delux-version auf deinem teller & mit bananenscheiben und gerstenmalz garnieren.



ingredients for 12 muffins:


4 very ripe bananas
1 cup coconut flour
1/3 cup agave syrup or coconut flower sugar
2 tsp coconut oil
4 tbsp apple mousse

2 tbsp ground flax seed
1 tsp apple vinegar

2 tsp baking powder
1/2 tsp vanilla powder

1 tsp cinnamon or gingerbread spice mix
1 lemon peel (grated)
pinch of salt

 

first mash the very ripe bananas either with your hands or masher (the same you'd use tp make mashed potatoes) until they've formed into a soft mass. add all the other ingredients and mix them well, fill the baking trays and bake at 200°C for 20min, then switch the oven off and let them rest in the oven for another 10-15min.

 

tip: for an extra caribbian feeling add 1-2 dashes of rum ;)

 

topping suggestion - for 2 muffins

almond-cocoa spread:

1 tbsp almond butter

1 tsp agave syrup

1/2 tsp unsweetened cocoa powder

mix everything and either spread over the top, or cut the muffin in 2 and spread in the middle, adding some slices of banana -mhmmm!

 

extra-extra:  add some soy cream to get the super-delux-creamy version. on your plate, finish it off with fermented barley syrup.
